Two meats on one tortilla, the Mexico City way: render a smoked Louisiana chorizo link down to its fat, rebuild the missing chile in that fat with bloomed spices, then cook chopped chicken thigh in it so the whole pan tastes like one thing. Refried beans cut with Rotel and queso go on as a schmear, cheese fries into the tortilla underneath, and a cold yogurt crema lands after the griddle.
