Soy-Ginger Sesame Sauce

The takeout glaze, whisked in one bowl and better the next day: soy, brown sugar, rice vinegar, toasted sesame and grated fresh ginger, with just enough cornstarch to make it cling in the pan.

1/4 cup ≈ 59 mL soy sauce Base for everything else.1
2 tbsp ≈ 30 mL water Whisk in. Takes the soy down from punishing to seasoned.
1 tbsp ≈ 15 mL toasted sesame oil Whisk in. Toasted, not plain -- it is the headline flavor, not the cooking fat.
3 tbsp ≈ 44 mL brown sugar Whisk in until dissolved. Also what makes the finished glaze glossy.
1 tbsp ≈ 15 mL rice vinegar Whisk in. The acid that keeps 3 tbsp of sugar from reading as dessert.
1 tsp ≈ 5 mL fresh ginger, grated Grate straight into the bowl -- no fibrous chunks, faster than mincing.
2 cloves garlic, minced Whisk in.
1 tbsp ≈ 15 mL sesame seeds Whisk in.

Notes

Make it the night before. Nothing here needs heat, and the ginger and garlic keep opening up overnight. Doing it ahead cuts the active time of whatever it goes on roughly in half, which is the whole reason it has its own card.
Re-whisk before it goes in the pan. Cornstarch settles into a solid layer on the bottom within an hour. Pour without stirring and you get thin sauce plus a slug of raw starch -- ten seconds with a fork prevents it.
It is not finished until it is hot. Unlike a mayonnaise-based sauce, this one is a thin liquid in the jar by design. The cornstarch only sets once it simmers, so judge the consistency in the pan, not in the bowl.
Grate the ginger, do not mince it. A fine grater turns fresh ginger into a pulp that dissolves straight in -- faster than mincing, and no fibrous strands in the finished glaze.
Sodium runs high. A quarter cup of regular soy sauce is most of a day's sodium across four servings. Low-sodium soy swaps in one-for-one without meaningfully changing the flavor balance.
Where this came from. Built as the glaze for Easy Sesame Chicken, but it does the same job on shrimp, tofu, salmon, or a pan of roasted broccoli.
